first and foremost, i am not necessary the best “recipe” gal because i don’t usually write down whatever i come up with. 🙂 but, i can definitely link to things that give me inspiration and tell you what I did differently and such.
tonight, i made the following: pretzel & jalapeno mustard baked chicken, asparagus, and parmesan mashed sweet potatoes.
i love Fitness Magazine and found my inspiration in one of there comfort food made healthy articles.
BUT…i didn’t want to use eggs. so i found another recipe that utilized yogurt. then, i decided to do the following:
i combined about 2/3 of nonfat plain yogurt single container, 3 heaping tablespoons of spicy grain mustard (see this picture, wonderfully delicious mustard i got at Whole Foods Market), a little dijon mustard, and a tablespoon of olive oil. i dipped the chicken in that mixture, then coated it in crushed pretzels. next I baked them at 400 degrees for about 23 minutes.
while they were baking, i nuked 2 HUGE sweet potatoes in the microwave for 8 minutes. after removing the skin, i heated up a tablespoon of butter, toss in the potatoes, and added about 1/4 of the leftover plain yogurt. next i added about 3 tablespoons of freshly grated Parmesan cheese.
lastly, i steamed the asparagus in the microwave then added salt, pepper, and lemon.
WAAAALAAA!!! dinner tonight, healthy and super delicious. 🙂
