Irish breakfast: spinach & mushroom egg bake topped with Dubliner cheddar, bacon, and spiked coffees!

oh boy! it’s my favorite time of year! a reason to get completely ridiculous, wear tons of green, drink way too much beer, and act like an irish idiot.

i’m a huge fan of st. patrick’s day, not just because it’s a national day to get drunk, but because i am a proud irish american.  i always take st. patrick’s day very seriously, getting up at the crack of dawn to make “kegs and eggs,” toss my traditional irish soda bread in the oven, and prep my corned beef for the slow cooker.

even miss pixel is wearing green!

if you joined me in the past for this glorious event, then you know whats in store. i get up at the crack of dawn people and cook traditional irish recipes all day long while watching

all of the Leprechaun series.  i am always trying to sneak in horror movies into my holiday celebrations.  there is almost a horror movie for every occasion! and, of course my favorite of all the Leprechaun films is Leprechaun in the Hood, where the Leprechaun ends up in the inner city, Compton, CA. it’s waaaay too funny!

other fun things to do is rock out to awesome irish bands such as the following: Flogging MollyDropkick Murphys, The Pogues, The Chieftains, and many many more.

okay, so here’s the menu for this evening’s feast:

  • the hayden irish soda bread (secret recipe) with irish butter
  • corned beef and cabbage
  • stewed carrots, potatoes, and brussel sprouts
  • Jameson
  • and of course BEER.

i’ll post my delicious meal pics later this evening as well as debauchery on my flickr.
